ChocNut Filled Banana Cupcake

I'm definitely nuts over this iconic Filipino candy bar. Choc-Nut is a combination of ground peanuts, milk powder, cocoa powder and sugar molded into a ridged thumb-sized candy bars and iconically wrapped in pinstriped wrapper. 


If you live in the Philippines and was born on the 70's and 80's then I'm sure you're one of those kids who often line up in the neighborhood convenience store after school to buy this fragile milk chocolate confection.

This is a healthified take of my Banana Muffin with a Twist. I made these as snack for my toddler who is enormously fond of banana. These has plenty of banana flavor but not too much and had enough chocolate chips for sweetness.

Chocolate Beet Cupcake

I've always have an aversion in baking healthy and the main ingredient is vegetable. I know some of you will cringe the idea of putting beets in cupcakes but often fruit and vegetable puree are added to baked goods for an added nutrients and to make them more healthier than their non-puree counterparts. In the case of this chocolate beet cupcake, the chocolate hides the beet flavor quite well. I skipped the grueling part of roasting the beets and just bought a canned beets in the supermarket *winks* but I don't think that that jeopardize the nutritional value at all.

Candyland Giant Cupcake

Here's my first project for my giant cupcake pan which my husband bought for me on one of our special occasion. My son's teacher ordered this for her daughter's candy land themed party. I opt to not make it too busy with many colors and decorations. For the cake frosting it's an ombre of light and dark pink. 


Since it's a candy themed cake I put some colored sprinkles and chocolate candies at the bottom.

... and some colorful lollies to make it more candy whimsical.

Giant Cupcakes Ideas


So, I recently owned a KitchenAide that my husband gave me on our fifth wedding anniversary and it comes along with a Wilton giant cupcake pan! I haven't use it yet but I will for sure sooner. Anyway, here are some the ideas that I would like to make for my giant cupcake pan and I hope to add more soon and some that I will be making soon.

A very good friend who had been ordering from me often asked if I can bake her eggless cupcakes because she recently found out that her adorable baby, whom she purely breastfeed, is allergic to eggs. I was elated with excitement to bake those for her. I love it when patrons suggest something that is new for me. I just love baking and baking healthy that is.

Carrot Cupcake Surprise with Cream Cheese Frosting

I think this is by far the most moist and delicious carrot cake ever! Soft and sweet and simply delectable.
