If you browse my blog you will see a few versions of my banana baking adventures! This recipe yields twenty four one ounce mini muffins, 3 regular muffins and one loaf cake. It's a lot but the good thing is you can freeze some if there are still any left overs. Just wrap them in a cling wrap or in a ziplock and cover with aluminum foil and into a container to avoid freezer burns.

Healthy Double Chocolate Cake

Chocolate Wacky Cake
Wackiness don't just apply on selfies and group shots but on cakes as well. There's a Wacky Cake also! This cake has no eggs, milk, or butter on it kaya wacky, diba? hehe! Don't fret because I can assure you this is really good! It came out moist, dark and delicious.
It's been toasty in my part of the world this couple of months and I swear to take a hiatus on baking to take care of the little bun in my oven, haha, but the inner baker in me can't really resist! Good thing this chocolate recipe is very simple and easy to make.

Monster Inc. Birthday Party
It's been a while! You may, or may not have noticed my absence from posting on this blog. After like a forever blog hiatus, I'm back and ready to share! I can't promise there won't be quiet weeks (hehe) please bear with me because this hormonal changes in pregnancy is making me very tamad! haha! Yup, I'm on my second trimester now. Thank you!

This is a two tier vanilla cake with buttercream frosting. I let my little boy do the frame work. We had so much fun decorating his cake together! This are all edible.

Banana Pecan Chocolate Cake
One word. Delicious!
Healthy option.
Ingredients
3 cups cake flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon baking powder
1 cup unsalted butter, softened
2 cups sugar
3 large eggs, room temperature
1 1/2 cups mashed bananas, very ripe
6 tablespoon buttermilk*
1 1/2 teaspoon pure vanilla extract
Garnish
Pecans, chopped
Chopped chocolate bar or chocolate chips
Preparation:
Grease pan and line with wax paper.
In a small bowl, sift together the flour, baking soda, salt, and baking powder. set aside.
In a stand mixer fitted with paddle attachment, cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 3 minutes. Add the eggs, one at a time, and beating well after each addition. Add the mashed bananas. Add half of the dry ingredients, mixing well until incorporated, then add the buttermilk and vanilla, and then the other half of the dry ingredients. mix well but do not over beat.
Divide batter into prepared pans. Garnish batter with chopped pecans and chocolate or chocolate chips.
Bake for 40 minutes for a 9x2 inch pan. Time depends on how big or shallow your prepared pans. Doneness is a little browning on top or inserted cake tester comes out clean.
Cool in the pan for at least a minute and cool completely on the cake rack completely.

Queen Elsa
Frozen movie themed cake is very popular these days and my kitchen is not excluded to make the best loved character in the movie - The Queen Elsa!
My friend asked me to make her daughter's dream come true on her birthday. She wants me make her the queen elsa doll cake and of course I said yes because she is not only a very good friend but the celebrant is my god-child. I'm sure she will remember this gift for a very long time.
and of course I it comes with cupcakes with snow flakes...
