Chocolate Chips Zucchini

This is a great way to sneak vegetable into your baking. These are decadent cookies and definitely not your standard drop cookie. The Zucchini provides moisture to this cookie and make this soft and almost cupcake like. So chocolaty and delicious! 



It's been my passion and almost obsession to incorporate fruits and vegetables to my baking. My little boy inspired me to bake healthy. This is now his favorite.... hehe 







Ingredients

  • 1/2 cup butter 
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/8 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt (if using unsalted butter)
  • 2 cups grated zucchini


Directions
  • Preheat oven to 350 degrees F. Lightly greased cookie sheets.
  • In a medium bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the egg and vanilla.
  • In another bowl, combine the flour, cocoa, baking soda and salt; Whisk to combine.
  • Gradually stir into the creamed mixture. 
  • Fold in the grated zucchini.
  • Drop by rounded spoonful onto the prepared cookie sheets.
  • Bake for 10 minutes.
  • Allow to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
