Cornflakes-Pretzels Chocolate Chip Cookies

I love trying new recipes and feed people yummy baked goodies. This cookie is inspired from the infamous momofuku cornflake cookie recipe. I just tweaked the recipe and procedure because I am that lazy baker, haha! I just try to use what's in my pantry. You see, my bag of pretzels have been laying on my table for quite sometime now, hehe. So really this is like a dump-all-whats-on-the-pantry cookie? haha! If you're a fan of sweet-and-salty then this is the cookie for you!

Sugar Cookie - Rolling The Dough

After preparing the dough let it set in the refrigerator for an hour... 

Cold dough makes you roll out the dough efficiently. 

I roll my dough in between parchment paper. It saves me time cleaning up and using more flour dusting the dough and the counter. Oh, I just love my Joseph Joseph rolling pin - It does take away the guesswork out of preparing the cookie with its adjustable discs. 

Now I can roll the dough to the exact thickness that I prefer for my cookies.

Cut out the shape as close as you get to each other. 

Put directly into the baking sheet and return to the refrigerator for a minute or more so that it will hold its shape well while baking. Roll out the excess dough and repeat procedure.

Bake cookies according to recipe's direction and cool completely on the rack before decorating.

Spider Infested Chocolate Chip Cookies

I first saw this idea at iambaker and thought it was brilliant! Who would't want a delicious yet creepy treat on the month of October? I actually made these for my son to give away to his teachers and classmates at his day care school and  another way of teaching him the lesson on Sharing =) 

Oreo Covered Pops

I love Oreo Cookies and its versatility.

Making these are as easy as 1 2 3....

Ingredients

Double Stuff Oreo

White Chocolate or may also use White Candy Melts

Lollipop Sticks or Sucker Sticks

Sprinkles

Parchment paper

Double boiler, if you don't have a microwave,for melting the chocolate or candy melts

(if using a microwave, melt chocolate in 30 seconds increment and stir until smooth)

Directions

• carefully remove one side of the oreo cookie
• using the sucker sticks, make an indention on the cookie cream 
• dip at least half an inch of the sucker stick into the melted chocolate or candy melts
• place sucker stick into the indented cream and put a small amount of the melted chocolate to create a bond to the other cookie
• place back the top of the cookie and let the oreo pops sit for several minutes to harden

• dip the oreo pops into the melted chocolate or candy melts. Cover both sides.
• allow excess chocolate to drain off and immediately top with sprinkles before the chocolate hardens
• place the sprinkles oreo pop in a parchment paper and allow to harden for at least 30 minutes

Chocolate Chips Muesli Cookies

Healthy treats for the family.

Recipe based on Bob's Red Mill 

Ingredients

• 1 Egg
• 1/2 tsp Vanilla
• 1/2 tsp Salt
• 1/2 tsp baking soda
• 3/4 cup Brown Sugar
• 1/2 cup unsalted butter, soft
• 3/4 cup All Purpose Flour
• 1 cup Old Country Style Muesli
• 1/2 cup Chocolate Chips

Directions

 Heat oven to 375°F. Sift flour, baking soda, and salt together and set aside. Blend butter, sugar, and vanilla. Beat in egg. Add flour mixture and mix. Stir in Muesli and chocolate chips. Drop by teaspoons on lightly greased cookie sheet. Bake at 375°F for 10-12 minutes.

Egg Free Chocolate Chip Cookies

No need to worry if there are no eggs in the pantry! 

I never thought I can find a cookie recipe with no eggs that is still so oh! yummy! It may seemed impossible to whip up a cookie without the eggs! I saw the recipe for the cookies on recipe4living. 

Chocolate Crackles Healthy Version

These cookies are crispy on the outside and soft and chocolatey on the inside... very chocolatey and plain yummy without the guilt! Oh, okay kunting guilt lang, hehehe. This recipe stems from Martha Stewarts crackle cookie recipe. As you know I love to experiment on ingredients and make the original recipe its healthier version and I'm making this for my toddler as afternoon snack- only the best for the kiddo : )

I didn't have all the suggested ingredients on hand so I have to improvised a bit, hehe. I can only imagine how they would be if I actually followed the recipe. 

Chocolate Chip Cookies

Inspired by Martha Stewart's recipe. I just tweaked the ingredients a bit and use ingredients that are available in my pantry but it did still come out the way I want it. *winks

for the small cookies I used the 1 oz. cupcake pan and baked them for 10 minutes. I added the chips half way from the cooking time.

Chocolate Chips Zucchini

This is a great way to sneak vegetable into your baking. These are decadent cookies and definitely not your standard drop cookie. The Zucchini provides moisture to this cookie and make this soft and almost cupcake like. So chocolaty and delicious! 

It's been my passion and almost obsession to incorporate fruits and vegetables to my baking. My little boy inspired me to bake healthy. This is now his favorite.... hehe

I made these all organic cookie when my little boy just started to eat solids... about a year old, I guess. Though this isn't his favorite, haha! But I'm sure health conscious grown-ups will gobble this like I did!

Ok, here's the thing... I forgot to jot down the measurements for the ingredients when I was making this but as far as I can remember I made this out from a cookie recipe and just tweaked the ingredients and replaced them with premium stuffs. shame on me! haha!

anyhow, these darlings are made of... organic wheat flour, aluminum free baking soda, wheat germ, vegetable oil, organic egg whites, organic apple juice, mascuvado sugar, and a handful of chocolate chips!

Oat and Wheat Germ Cookie

Wheatgerm is one of the most nutritional products available but not everyone is aware of it. In fact, wheat germ contains 23 nutrients and has more nutrients per ounce than any other vegetable or grain. No doubt it has a glowing indictment from nutritionist and dietitian.

I love baking with wheatgerm especially if it's for the little tummy.  Kids can tell!

From my previous post I made a  wheat germ cookie for babies and this recipe is for the toddlers discriminating taste. Here's the final result...  Who says yummy can't be healthy?

½  C firmly packed brown sugar

2   Tbsp unsalted butter

1   C wheatgerm

¾  C vegetable oil

1   premium Egg

1   tsp vanilla extract

1   C chocolate chips, optional

3   C steel cut oats

1   C whole wheat flour

½  tsp baking soda (aluminum free)

Heat oven to 350℉. Mix wet then dry ingredients. Drop by spoonfuls onto cookie sheet lined with parchment paper. Bake for 15 minutes. Remove to wire rack and cool.

yield: 3 dozen mini cookies Ingredients: 1/2 c. butter 1/8 c. wheat germ 1/4 c. wheat germ for coating 1/4 c. brown sugar 7/8 c. whole wheat flour 3 tbsp apple juice Direction: Let butter soften at room temperature but do not melt. Blend in wheat germ, brown sugar, and whole wheat flour. Pinch off a teaspoon-size portion and roll into a ball. Roll ball in reserved wheat germ and then flatten with fork. Bake at 350 degrees. I made this for my little Ryker and he loves it!
