Chocolate Chip Cookies


Inspired by Martha Stewart's recipe. I just tweaked the ingredients a bit and use ingredients that are available in my pantry but it did still come out the way I want it. *winks



for the small cookies I used the 1 oz. cupcake pan and baked them for 10 minutes. I added the chips half way from the cooking time.





Ingredients

3 1/2 cups all-purpose flour (spooned and leveled)
1 1/4 tsp baking soda
1 1/4 tsp baking powder
2 tsp salt
2 1/2 sticks unsalted butter. room temperature
1 1/2 cups mascuvado sugar
1 cup granulated sugar
2 large eggs
1 1/2 tsp pure vanilla extract
1 1/4 cups chocolate chips

Directions

In a bowl, whisk together flour, baking soda, baking powder, and salt.

In a large bowl, using an electric stand mixer, beat butter and sugars on med-high until light and fluffy, 6 minutes. Reduce speed to med-low and beat in eggs, one at a time. Beat in vanilla, mix in flour mixture just until incorporated; fold in chocolate chips.

Refrigerate for about 20 minutes. Drop dough onto parchment-lined baking sheet.
Pre-heat oven to 350 degrees. Bake until edges are lightly golden brown, 17 to 18 minutes, rotating sheets half way through.

Transfer cookies to wire rack and let cool.
