It's a hot and sunny afternoon here at the metropolis but I'm craving for a fluffy pancake today!
So I made one from scratch...
1½ C A.P flour
3½ tsp baking powder (aluminum free)
1 tspn iodized salt
1 tbspn white sugar
1½ C milk
1 egg
3 tbspn unsalted butter, melted
- In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter. Mix until smooth.
- Heat a lightly oiled frying pan over medium heat. Scoop the batter onto the frying pan and brown on both sides.

There are a few things to remember though in making your pancakes fluffier. I recommend sifting the flour, twice and let your egg and milk set at room temperature and use unsalted butter. Thus, beat your egg and the melted butter lightly until blended, then lightly beat in your milk and be careful not to over beat your egg. Add to your dry mixture. Your result is a fluffy, nummy, good old fashion pancake! serve hot with maple syrup and melted chocolate.
