Mini Zuchinni-Carrot Chocolate Chips Muffins

Always my favorite kind of muffins. Oh... those healthy little veggie that peaks out are such a delight to see. For my other recipe for Zucchini you can check them Here and Here . LOVE!


1 1/2 cups all purpose flour
3/4 cup sugar
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 large egg, lightly beaten
1/2 cup canola oil
1/4 cup milk
1 Tb lemon juice
1 tsp vanilla extract
1 cup shredded zucchini and carrot
1/2 cup chocolate chips


Pre heat oven to 350 deg F
Grease 1 ounce size muffin pan or may line them with paper muffin liners.

In a large bowl, combine flour, sugar,baking soda, cinnamon, salt and gently whisk to mix.
In another bowl, mix together egg, milk, lemon juice, and vanilla extract. Gently stir into dry ingredients until just moistened. Fold in zucchini and chocolate chips. Do not over mix. scoop 1 teaspoon of the batter into prepared muffin pan. Bake for 15 minutes in preheated oven.

Cool slightly in a wire rack before removing from the pan.
