Brownie Bites ( one egg recipe )



Saturday baking in my quaint kitchen today! 



I tried to make a marble effect but I think I need more practice on that though, hehe




This recipe is from eightymphmom's recipe on her blog that I tweaked a bit. This is a one egg recipe brownie that yields only a few brownie cups. I substitute the sugar with mascuvado and I like that it came out not too sweet.

This is a mini cupcake pan so that at least medyo marami naman ang yield =)


Ingredients
1/2 cup mascuvado sugar (you may use brown or white)
1 egg
1/4 tsp vanilla extract
1/4 cup unsalted butter, melted
1/4 cup cake flour
2 Tbsp + 2 tsp cocoa powder
1/8 tsp baking powder
1/8 tsp fine salt
creamy peanut butter

Procedure

Pre heat oven to 350 degrees F. Grease cupcake pan. In a bowl, whisk sugar, egg and vanilla extract then add melted butter and whisk just until well-combined. In another bowl, combine flour, cocoa powder, baking powder, and salt. Pour dry ingredients into wet ingredients and stir until incorporated. 

Using a teaspoon, scoop batter evenly into cupcake cups and drop a little amount of that creamy peanut butter into the center and swirl the butter and batter together until you get that marble effect. Bake for 5-7 minutes or until toothpick inserted comes out clean. Let brownies stand in the cupcake pans for a minute and then transfer into a wire rack and let cool, that's if you have the patience to wait hehe!
