Banana Chocolate Chip Muffins v.2



Muffin Lovin' Thursday! 



This is a healthified take of my Banana Muffin with a Twist. I made these as snack for my toddler who is enormously fond of banana. These has plenty of banana flavor but not too much and had enough chocolate chips for sweetness. 



Extra batter can be made into muffin bites.


Ingredients

1¾ cup All Purpose Flour
1    cup mascuvado sugar
2    tsp baking powder 
¼   tsp salt
¾   cup milk
3    ripe bananas, mashed
½   cup olive oil
1    tsp vanilla extract
½   cup chocolate chips

Directions

Pre heat oven to 350 degrees F so that it will be hot when the muffins are ready to bake. Combine all the dry ingredients in a bowl and then the wet ingredients. Fold in the chocolate chips and the mashed bananas. Don't over mix just keep the mixing to a minimum. spoon the batter into the greased muffin tins or in a cupcake liner if you prefer one. Bake for 25 minutes or until toothpick inserted comes out clean but not dry. The recipe makes 6 muffins.

***double the recipe to yield more muffins. Wrap in plastic wrap and freeze for quick breakfasts.
