Wheatgerm Cupcake with Chocochips

Here's my take to the most nutritious ingredient in baking and cooking.  A healthier version of the classic cupcake...






Wheat germ contains 23 nutrients (like potassium and riboflavin) and has more nutrients per ounce than any other grain or vegetable. It also has a high concentration of complex carbohydrates and protein which makes it the perfect ingredient for getting your day started right.

2 tbsps oil
egg
12 cup white sugar
12 cup brown sugar
1 pinch salt
2 tsps baking powder
34 cup milk
1 cup flour
12 cup wheat germ
1 tsp vanilla
12 cup chocolate chips

  • Preheat oven to 350F
  • In a bowl, whisk salt,baking powder and flour. Set aside.
  • In a big bowl, mix oil, egg, white and brown sugars and vanilla until smooth and light in color.
  • Add the dry ingredients to the egg mixture and mix in wheatgerm and chocolate chips.
  • Pour into cupcake pans up to 2/3 full.
  • Bake for 20 minutes.
