Dark Chocolate Cupcakes with Cream Cheese Frosting


This is my tried and tested recipe for a moist chocolate cake.




yields 30 cupcakes

ingredients

2¼ cups brown sugar plus 2 tablespoons
1¾ cup A.P flour
¾   cup Cocoa powder
1½ teaspoon baking powder
1½ teaspoon baking soda
1    teaspoon salt
2    medium eggs
1    cup milk
½   cup vegetable oil
2    teaspoon vanilla extract or almond extract
1    cup boiling water

directions
  • heat oven to 350℉ and line cupcake liners into cupcake pans
  • sift together sugar, flour, cocoa powder, baking soda, baking powder and salt in a large bowl
  • In another bowl, whisk eggs, milk, vegetable oil, and vanilla/almond extract
  • add liquid mixture to dry mixture and mix until incorporated.
  • mix in boiling water and combine together. Batter will be very thin.
  • pour into cupcake liners. Bake for 30-35 minutes or until toothpick comes out clean.

Cream Cheese Frosting

1 cup cream cheese, softened
½ cup unsalted butter, room temp
1 teaspoon vanilla extract
2 cups confectioner's sugar, sifted

In a mixing bowl, cream the softened cream cheese and butter. Blend in the vanilla extract and slowly add the confectioner's sugar. Whisk until fluffy.
