Whole Wheat Mousse Au Chocolat Cookies


Super duper cookies. What not to love!

Ingredients

3 cups whole wheat flour
1 1/2 tsp baking powder
1 tsp baking soda
1 1/2 tsp kosher salt
2 sticks unsalted butter, cold
1 cup brown sugar
1 cup sugar
2 eggs
2 tsp pure vanilla extract
8 ounces lindt mousse au chocolat ( may use other type of chocolate), roughy chopped

Directions

Preheat oven to 350 degrees.
Whisk the flour, baking powder, baking soda and salt in a bowl and set aside.
In a bowl of a stand mixer fitted with a paddle attachment on low speed cream butter and sugars about 2 minutes. Scrape the sides of the bowl. Add the eggs one at a time. Mixing until just combined. Mix in the vanilla extract. On low speed, add the flour and mix until just combined. Add the chocolate to the batter and mix on low speed until just combined. 
Scoop balls of dough that are approximately 1 tablespoons worth into the baking sheets and bake for 10-15 minutes.
