Chocolate Zucchini Cupcake

I made a few batch of zucchini cupcakes before and it turn out dry and completely inedible, a complete waste! So I tried my luck again today and I'm totally impressed and happy with the result! I love the addition of zucchini on these little treats and you would never guess the secret ingredient simply by taste. You will definitely score if you're serving a picky eater!




Zucchini creates a moist cake and make it slightly healthier and perfect compliment to this delicious and moist chocolate cupcakes!

Cupcake Loops - The beginning

Baking cupcakes is more than a hobby for me now... I'm actually earning something from it and by that I mean no more over budget on our weekly grocery, hehe. I don't have formal education in pastry arts though I have a baking for beginners certificate on my sleeve but I'm really just one of the online-kitchen warrior-food network student. But making and decorating cupcakes are my passion! I think that'll be enough to make this hobby into something fruitful. Anyhow, recently I launch my  online cupcake shop and lucky enough I receive orders of five dozens cupcakes for a baptism. It's a great start!

My ever supportive husband was really the one who came up with the name Cupcake Loops. It is because obviously I love cupcakes, pastel colors and fruit toppings and coincidentally my son's favorite cereal is fruit loops! That's how the name was born. 

I will be baking and whipping more flavors and post them here soon and my kitchen will be my partner in my all my cupcake adventures! 


I bake and clean up my mess but I can't complain... I so love what I'm doing. ☺

Cupcake Art with Buttercream Frosting

A day with cupcakes! I can never get enough with baking and styling these little sweethearts. Usually I frost my cupcakes with cream cheese which, by the way, my frost of choice but today I made buttercream frostings. It turned out very well and I love it!

DIY : How to Make Your Own Cupcake Wrappers

Here's a tip for a budget savvy mommy... You can now make your own cupcake wrapper with a zest and make a fancy touch to elevate that common cupcake liner into something delightful! They are super easy to make yourself, out of whatever craft paper or artsy magazine paper you like.  They are usually called wrappers, by the way, because cupcakes are not actually baked on theses cupcake wrapper. The wrappers are slipped over the liners after baking and decorating.

Honey Mustard Sauce


I love honey mustard... And since I enjoy it I clearly needed to make my own. I found this recipe online and adjusted to my tastes. This kind of thing is really best adjusted to your own taste. As versatile as the dressing so as the variety of its use. I made this ahead for my chicken cordon bleu for dinner later.




ingredients

½    cup mayonnaise
2¼  tbsp prepared mustard
2     cups honey
½    tbsp lemon juice

directions
  • In a small bowl, whisk everything together. Stored covered in the refrigerator for an hour ( or longer ) to let the flavors mingle.

Veggie Stuffed Squid with Marinara Sauce

This main dish serves well for a light and healthy lunch for the family. Serve with pasta or crusty bread to soak up the glorious sauce or in our case a cup of fragrant rice!




Saturday Breakfast Special


I love saturdays.... This particular day of the week is when we don't rush on anything. An easy breezy day! This morning I made another version of my fluffy pancake. A little heavenly!


A cup of Ca Phe Hoa Tan and my version #2 of Fluffy Pancake made my saturday!



FLUFFY PANCAKE v.2

batter                                                             sour milk and egg mixture                       pancake!

ingredients

1½  cup milk
4     tbsp distilled white vinegar
2     cups A.P flour
4     tbsp white sugar
2     tsp baking powder
1     tsp baking soda
2     eggs
4     tbsp salted butter, melted
1     tbsp vanilla extract

directions
  • Combine milk and vinegar in a bowl and set aside for 5 minutes to "sour".
  • In a separate bowl, combine flour, sugar, baking powder, baking soda. set aside.
  • Whisk eggs and butter into the "soured" milk. Pour the dry ingredients into the wet ingredients with a spoon until combined but don't over mix these. Having a few lumps in the batter is a good thing! 
  • Heat a non-stick skillet over medium heat and pour ¼ cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.   

mommy notes: sour milk is simply a substitute for buttermilk. It does not make things sour!

C is for Cookie


I made these all organic cookie when my little boy just started to eat solids... about a year old, I guess. Though this isn't his favorite, haha! But I'm sure health conscious grown-ups will gobble this like I did!

Ok, here's the thing... I forgot to jot down the measurements for the ingredients when I was making this but as far as I can remember I made this out from a cookie recipe and just tweaked the ingredients and replaced them with premium stuffs. shame on me! haha!

anyhow, these darlings are made of... organic wheat flour, aluminum free baking soda, wheat germ, vegetable oil, organic egg whites, organic apple juice, mascuvado sugar, and a handful of chocolate chips!

G7 Trung Nguyen Vietnam's #1 Coffee


Dear Coffee, I love you! ahhh, that's for a good cup of coffee in the morning. I usually brew our own coffee but a few weeks ago a friend of mine gave us a box of G7 Trung Nguyen Instant Coffee from her recent travel with her husband to Vietnam. According to my research this particular company produce Vietnam's #1 coffee known as Ca Phe Chon, a name has the rough translation of "Weasel Coffee." This is the counterpart of our very own Civet Coffee or better known as Tagalog Cafe Alamid (Alamid Cafe). The G7 so far after sampling a packet is quite good. The taste is indeed richer and has full-bodied flavor that is missing from most instant coffee.



While not tasting quite like brewed coffee, this is a great cup of coffee to enjoy when you're too lazy to brew or to bring with you when traveling. Just add hot water and you can have a gourmet coffee anywhere...
